It depends on the conditions. Moria's second husband was a crime
scene, so even though he'd signed a donor card, there was nothing
useful to harvest after the police had finished their investigation.

There are a lot of conditions where the body won't be discovered soon
enough for any organs to be recovered. The case that launched this
thread, and your presence among us, was one of these.
