Don't know if this is it but aside from Albondigas this is the only
other time I make meatballs.
Previously I thought it might be the Albondigas but upon taking my
time and reading your post I see I was mistaken.
Here's the Italian wedding soup I posted to the group. It contains
meatballs.
The links to the pic's has expired but here's what I posted. I made it
from a Giada De Laurentis recipe. Look up her recipe for Italian
Wedding Soup and you'll get the meatballs
Cut and pasted from the old post. Hope this helps.
Tonight I made an Italian Wedding Soup loosely based on a recipe by
Giada De Laurentis.
Using the heel of a loaf of multi grain bread, I chunked it up and
added two finely diced green onions, salt and an egg. I set this aside
to let the bread absorb the egg.
To this I added about a half of a pound of lean ground beef. I
smooshed it all up and using a teaspoon made little meatballs. The
only greens I had to make the soup with was some fresh green beans and
fresh spinach.
Add a tablespoon of freshly grated parmesan cheese to one beaten egg.
Then slowly drizzle the egg mixture into the broth while stirring the
broth in one direction. I used a fork to stir the broth which helps
break up the egg mixture.
This is a fresh and delicious soup.
