I'm never in such a hurry that I cannot make something from scratch.
However,
if I were pressed for time, I might consider:

quesadillas
scrambled eggs
some sort of sandwich
reheated leftovers (we make extra food on the weekends)

Just leave the dishes (if you're at home); it won't hurt them to sit
for half a day.
