Well Dan, it is about the concentration of these extremely
disagreeable smelling chemicals present.
What you smell at the market stall selling those thorny fruits is an
exudation of flavor chemicals in higher concentration…almost in the
same level you smell from the well used baby diaper (or fecal matter
to othersdepending upon the sensitivity or their noses).That is in the
vicinity of 10 parts per million in the actual presence of the
durian fruit or dirty diapers. Too little isn't it? But significant
to offend your sensibilities.
And in its raw state where other components in the durian fruit
enhances it.
And remember at what concentration does the flavor description change
from offensive to agreeable; about 1-3 decimal places. That is a
fraction of the original concentration.That is the simplest
explanation.
