If the zukes are fairly young, not very seedy, and fresh, they make
excellent pickles. There are specific recipes available for zuke pickles
but I've found they can be used in about any pickle recipe.

Might keep your eyes peeled for green tomatoes too, they make excellent
pickles of all kinds.
