nononononononosnow.

Pick them when they're 1-1/2" diameter if you want to pickle them, and
stick them in the fridge until you have about 20 of them - probably not
more than a couple days if you have as many as you say. :-) If you
let them get past that size, the next day they'll be bigger than you
want them for pickling.
