Does not require any special pot or pan, just one that allows you to lay
in the chicken and liquid of choice (broth, water, whatever). You don't
boil it madly, just simmer until the meat is cooked.
I often use the leftover poaching liquid to cook rice in for the same
meal. I strain it and measure it for the rice.
