I understand. Sometimes we do not have mozzarella nella casa mia so we
use what we DO have. It's not Caprese, but with tomato, cheese, basil
and olive oil, it's still good! (And sometimes even a bit of balsamico,
too, but it makes the cheese a little tough.) ;-)
