That's a nice recipe, another one is without onion, like this

- boiled, peeled and sliced potatoes
- garlic, minced
- fresh parsley, finely chopped
- EVO oil
- freshly ground black or white pepper
- wine vinegar
- salt

Oil the dish and sprinkle it with some garlic and parsley, lay the potato
slices and cover with the rest of the ingredients.
Akin to the one who you posted, this too has to be slightly refrigerated.
Since it's so fresh, we typically do this recipe in summer.
