A sandwich from my childhood
Finely ground polenta _is_ cornmeal!
I usually use a beaten egg with s&p, dip in cornmeal and fry until you
get a crisp crust. You can use saltines, flour, cornmeal, bread
crumbs....whatever! It helps if you have a little bacon grease in your
skillet, and if that skillet is iron!
