Chefs knife. If I want paper thin cuke slices/ribbons, for like garnish, I
use my trusty veggie peeler.

Neither is faster than you can move your arm... I find the box grater much
safer.

Cucumber salad, I posted the picture yesterday, got 1 1/2 quarts... peeled
sliced cukes, apple cider vinegar, salt, white pepper, dill weed, honey.
