What is it specifically about Indian food that makes its discussion boring to
you while you're willing to eat it in restaurants? Also, why wouldn't you make
it at home? If you're willing to boil beans, why not daal? If you're willing to
saute onions and garlic, why not add ginger and chiles for an all-purpose
tarka? If you're willing to grind coffee, why not grind spicy seeds? I imagine
you eat rice at least sometimes; why not make it basmati? Chapatis are nothing
but Indian flour tortillas, and there's even a Panjaabi corn roti that is only
slightly thicker than a corn tortilla.
