Interesting fish. It's somewhat sour - like it was fed lemons. I
have no reason to believe it wasn't fresh - unless this fish defies
the usual signs of staleness. Nice texture; the fat is imbedded
into the flesh rather than having streaks like salmon or steelhead.

Bring on the esters, baby!
