How would I know if ground beef is bad?

I used to give my meat I wouldn't eat to my dog - they have cast iron
stomachs. I never keep minced/ground meat unfrozen (or other "prepared"
meats - like sausages, franks etc) in the fridge for more that 2 days. I am
not saying I fed my dog rotten meat, just meat I wouldn't eat because I have
a fear of eating meat kept in the fridge too long.
