I have made a very good Italian sausage in the past. Here is the recipe:
1/4 tsp. lemon peel
1/4 tsp. black pepper
1/4 tsp. granulated garlic
1/4 Tbs. sea salt
1/2 Tbs. dried basil
1/4 tsp. marjoram
1/4 tsp. powdered rosemary
1/4 tsp. savory
1/4 tsp. sage
1/4 tsp. oregano
1/2 tsp. paprika
1 tsp. Fennel seed, whole (or 1/4 tsp. ground fennel)
