Remove even from source of residual heat, even if the burner is now off.
I'd just turn off my gas burner usually unless it were something very
fragile would I actually move the pot. On an electric burner I'd remove
it to a cold burner.

Stir enough that it doesn't burn to the bottom.

Everything has its own viscosity and propensity to come together or to
burn. I guess as chief cook and bottle washer my job is to be able to
sense the difference between the two and act accordingly. Lucky for me I
can manage to do so easily, almost unthinkingly.
