I do that quite a bit. It's easiest with amorphous dishes, where I just
increase the quantity and pack part in a lunch container immediately.
Examples:
Beef stew
Ground beef/vegetable/rice casserole
Chicken and vegetables with noodles
Spaghetti and meat sauce
Chili and rice or chili mac
Jambalaya
Beef and vegetable soup
