I three to five days should be fine. If you keep it longer, it will develop
a more sour taste - which could be to your liking, but you have to consider
this. I often make dough and bake some of it immediately, and keep the rest
to bake later. We can't eat two loaves of bread before they go stale. If I
save half the dough and bake it a couple of days later, it works out better.
