Mushroom Medley Soup
INGREDIENTS:
1 cup Shitake mushrooms, rough chopped
1 cup Button mushrooms, rough chopped
1 cup Oyster mushrooms, rough chopped
1 cup Crimini mushrooms, rough chopped
1 cup Enoki mushrooms, rough chopped
1 cup Bunashimeji mushrooms, rough chopped
1 cup Hiratake mushrooms, rough chopped
1 med. onion, white, diced
3 cups chicken broth
1 clove garlic, crushed (variable amount)
4 TBS. whole peppercorns
Salt to taste; kosher
1 cup lentels, red
2 cups Tofu (firm)
METHOD:
Put onions, peppercorns, garlic and lentels in bottom of crockpot.
Clean and cut mushrooms, layering each mushroom in crockpot. Add in
chicken broth. Set on high for 5 hours or low for 8-10 hours. Last 30
minutes of cooking, slice tofu into strips and add into soup. Stir
about and serve with crusty Italian bread and a non-oaky Chardonnay.
