This is a bit overstated. In fact, it's limited to two hours
within a certain temperature zone - 40 F - 140 F

The clock doesn't start when the food comes out of the
oven. It starts when the temp goes below 140 F.

This is an important point which many people don't
take into account. The food should have a small cross sectional
area so it chills quickly.
