I don't think of pine nuts as tasting very much like pine, and the texture
of galangal is quite woody and fibrous, so I don't think it would be an
appropriate substitute. Because of its texture you'd have to slice galangal
very thinly across the grain if you wanted to incorporate it into a pesto.
Might be an interesting experiment, though. Galangal has a much stronger
flavor than pine nuts, too, so you wouldn't want to include anything close
to an equivalent volume.
