Neither are rennet, salt and the cultures that are used to make many
cheeses.

ObFood: We had Mac and Cheese for dinner. Total coincidence. The
Alton Brown recipe, with generic orange American cheddar. It was very
good. With broccoli and a salad. My daughter took her broccoli out
when it got barely warm (CRUNCH! CRUNCH! CRUNCH!), but my wife and I let
ours cook until it softened a bit.
