Default Spring Spatchcock

I replaced the burners on the Weber yesterday and it works better than
new. During disassembly, I saw where the original burners were bent
when the unit was originally put together.... causing one side of the
grill to be much hotter than the other. Now I have a nice, even heat
across the whole grill.

To celebrate, I have a whole chicken defrosting. Am thinking of
spatchcocking it and using a chicken herb mix we got as a gift. I'll
get the grill to around 300 degrees and cook for 30 minutes on each
side... with a little extra time if needed.

I love cooking on the grill..... and am really thinking about getting a
smoker.
