If they're nice cheeses blending them (like stupidmarket deli
cheeseball made from scraps) is a waste of perfectly good cheese...
choose just one or make separate bread puddings each with one cheese.
I don't think mozz will work well with bread budding, too stringy. In
fact I'd not use whole cheese, I'd make a cheese sauce for a savoury
bread pudding... havarti is too mild for savoury, use chedder, edam,
gouda.... a smoked version works well with savoury.
