Interesting. I wonder if this is unsafe in the same way raw milk is
'unsafe', or is there a really good reason that it's unwise to do so? We
make our own sauerkraut, pickled eggs, kefir and consume unpasteurised
dairy, etc. and never had a problem. I'm certainly not dismissing what
you say at all, just curious. I guess coming from under the ground,
being mycelium could bring up a bunch of new issues.
