This one is crap.
Eggshells texture varies with the individual bird. This tip might be
true of citrus fruits however! The smoother and shiner the peel on
citrus fruit, the riper and juicier it is.
Fresh eggs will stand up fairly solid in the pan or bowl when you break
them open. Older eggs will flatten out and that white stuff (Chalaza)
will disappear. The yolks also break far more easily in old eggs.
