We make something similar but without tomatoes. Cucumber, spring onion
and carrot shavings along with the noodles (which can be rice or soba).
Dressing of rice vinegar (or chile vinegar), fish sauce, soy sauce,
garlic, sesame oil and occasionally a pinch of sugar. Super for hot
weather!
