Pad Thai... dinner last night
I thought I would try to make Pad Thai last night and it came out pretty
well. This recipe is kind of a compilation of various recipes that I've
looked at here and on the Intergoogle.
Pad Thai
Sauce:
2 Tbls Tamarind paste
1/2 cup very hot water
4 Tbls fish sauce
5 Tbls palm sugar (I used brown sugar)
chili paste to taste (I used 1 tsp)
Mix it up, let it sit.
Soak about 7 oz of rice noodles in hot water for maybe 15 minutes. You
want them soft, but not mushy. (7 oz was 1/2 package and enough for the
two of us)
Stir fry a pound of shrimp, a tablespoon of minced garlic and a handful
of chopped green onions until the shrimp is about 3/4 done. Throw in
the rice noodles and half the sauce. Keep the heat high, keep
everything moving and add more sauce as needed.
Most Pad Thai recipes call for ground peanuts but I an not fond of them
so we added them as a garnish on Becca's plate... along with more green
onions.
It was pretty good.
