I had a similar dilemma when my kids became addicted to Swiss Enchiladas (the creamy kind). I ended doing just as you're pondering (instead of wrapping the tortillas, layering them.) Easy beans! And my rugrats still tear them up. Side of spicy rice and some mean beans, and you're in heaven. I like Rick Bayless; he's done more than his homework; he's gone first-hand. Way to go.
