Vinegar, very seldom. Mostly I like to use lime (not lemon) juice. I find
the flavor more pleasing and the sweet of the juice balances against the
hot. However that is just personal taste and what I was raised eating. IMHO
the only "wrong" in cooking is calling something that which it is not.
