Harvest mashed potatoes.
4 large red or russet potatoes (2 lbs)
2 medium-sized sweet potatoes (1-1/2 lbs)
1/4 c. butter
1/2 c. milk
1/4 c. sour cream
1/4 c. freshly grated Parmesan cheese
1 Tbs. prepared horseradish
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Bake the sweet potatoes about 1 hour until tender; peel and mash in a large
mixing bowl. Boil the russet potatoes in salted water to cover until
tender. Peel and mash and combine with the sweet potatoes. Add butter and
remaining ingredients. Mash with a potato ricer or beat by hand until
smooth. Pour into a lightly greased casserole dish. Bake until heated
through or until starting to brown on the top. Serve topped with additional
Parmesan if desired. Serves 8
Also cornbread dressing. I'm not a huge fan of turkey so I'm having a
standing rib roast for Thanksgiving. Brussels sprouts or baked cauliflower
if I can find it.
