I don't usually plate at home. If there are 2 or 4 of us especially, I
serve things family style. If more, often buffet style.
Why? Because over the years it has felt to me that people who bring
plates from the kitchen already arranged are in effect saying "I don't
have an abundance of this, and here's your share."
I come from a culture where food is abundant and people are encouraged
to eat their fill. How do you gauge people's appetites when you are
plating? Too much, too little? How do you know?
