A New Favorite for Thanksgiving or any Holiday dinner.
One of my friends had this dish at her workplace pot luck. One of her
co-workers brought it. She liked it so much she got the recipe and
made it and brought it to our dinner.
I was surprised at how much I liked this dish. It is obviously one of
those church cookbook or ladies club cookbook recipes, but you know
what.?.......it's really good.
Corn Souffle Casserole
1/2 cup (1 stick) butter, melted
1 medium onion, diced
1 green pepper, diced
1 can whole kernel corn with juice
1 can cream style corn
1 pkg Jiffy Corn Muffin mix
1 eggs, beaten
1-2 cups shredded cheddar cheese
Saute onion and bell pepper in butter till liquid is mostly
evaporated.
Mix together corn, creamed corn, Jiffy Mix and eggs Pour into
buttered casserole dish.
Sprinke sauteed onionn and butter evenly over the top.
Sprinkle cheese evenly over the top.
Bake at 375 for 30-45 minutes till set and bubbly and golden.
Let stand for at least 5 minutes. Serve warm.
Simple, easy and an excellent side dish. Everyone loved it.
