Default REC: Sticky Tea loaf

Given to me by a lovely little English lady, who made some for me, and to
my suprise it doesn't make me sick.

I've had to give up making my Date, Sultana, Lemon and Coconut loaf, as
that now makes me sick :-/



STICKY TEA LOAF

Oven 180C

1. Grease and line a 450g loaf tin.

2. Place in a saucepan 75g granulated sugar, 150ml milk and 75g dried
fruit - use sultanas, raisins, chopped dates, figs or a mixture. Stir over
a low heat till sugar has dissolved.

3. Add to pan, 4 level tablespoons (80g) golden syrup, treacle, or
marmalade, and mix well.

4. Add 150g self raising flour and 1/4 teaspoon mixed spice. Mix well and
pour into tin.


5. Bake 3/4 to 1 hour. Leave to cool in tin for 5 mins. Turn out, remove
paper and leave to cool. Serve sliced with butter.
