My silicone spatula didn't mind stirring my brittle at all--- It
didn't like trying to flatten it in my cold kitchen, though. [ok-- so
I missed the part in the directions that said to use a big, buttered
spoon. It is my first brittle in 40 years-- pistachio. . . mmmm]
As I was stirring and fighting the pain in my hand, I was dreaming
about a 'robostir', though I'd never heard of one before now.
Silicone is good to 4-500F. Sugar goes downhill after 350 or so.
