I'm happy with chorizo made from ordinary (muscle, not organ) pork.
Hell, I'm happy with vegetarian chorizo. However, there is something
about the way chorizo seasonings combine with the traditional organ
meats that go into Mexican pork choirzo. I don't need to eat it
often, but I would not consider myself a true appreciator of chorizo
had I never ever had it in its original form and liked it.
