Tilapia is a commercially farmed fish; so think of it in terms of
commercially farmed pork or chicken. Taste and texture depend on how and
where the product was farmed, how it was fed, how much excercise it got,
etc etc. One producer 's fish will be crap and another will be fresh firm
and delicate.
