Salmon farming has improved hugely over the last five years, both in its
environmental impact and the quality of the salmon, but there are still
shoddy producers out there; you have to acquaint yourself with the actual
farm before you can buy with confidence. Farmed white sea bass is also quite
good, but as far as I know it's only being farmed on a small scale, so it's
not all that easy to find.
