I don't consider that I cook out of passion, much more out of
survival... for the last 30 years or so very few eateries I've
frequented, no matter how steep their price range, serve what I
consider meals that are barely passable... I've gotten tired of
wasting my time, money, and having my expectations of a good meal
dashed by over priced crap presented slipshod by patronizing
douchebags. Actually as I've gotten older I no longer cook so much
because I like it, let alone passion... food has become a means to an
end but I happen to like good food well prepared. I no longer like to
cook so I cook as quickly as possible, yet still I take no short cuts
that cause quality to suffer... I guess I've been cooking for so long
that nowadays I cook out of instinct, I no longer need to think about
it any more than how my automobile finds it's way home, how I can get
to the terlit in the dark of night, pee, and return to bed, same as I
can shave without a mirror. With age I now do a lot of things
instinctively, I guess I've become my cats.
