OMG...that was the same menu item over on this side of town last night as
well! Something must've been in our MN air yesterday. I used to always
just serve it over biscuits, but tried it over rice a couple months ago in a
pinch when I was out of Bisquick. I actually like it over rice better.
Only I don't use the Cream Of soup as my base: just plain ol' milk, flour,
butter. My chicken was from a can, however. What can I say -- I'm a sucker
for childhood comfort food, and baby girl was sent home early from daycare
with a fever and a tummyache yesterday. Had leftovers for lunch today.
Even better the second time around.
