In your neck of the woods, I would expect you to cook the greens until
done then fry up some diced bacon, use the bacon grease in the pan,
add a bit of sugar and some white vinegar and salt and pepper. You
know, pretty much the same dressing as wilted lettuce. Pour over the
top of the beet/chard greens or toss with the greens.
