They're wonderful in salad, but they must be very, very young. By the time
you are making pickles out of the beets, they are way past young.
My mother also loved beets and greens. I wish you'd try her favorite
sometime. Cook the beets in water, the greens in a steamer over. Both
should be small and young.
When the beets are done, slip the skins off then dice them rather small.
Toss with the cooked greens and add melted butter and a drip of cider
vinegar. The two tastes together are just great, really, I swear.
