Here's what I'm planning so far:

hush puppies with mango-chile dipping sauce
fried catfish with tomato chutney
collard greens with garlic, cumin, fenugreek, and chiles
basmati rice with black-eyed peas, turmeric, bacon, and cilantro
gulab jamun with rose-geranium syrup

I'm working until Sunday morning, so that meal will probably be Monday
night.
