I just checked my NE Ohio Niagara:
Brix = 15.8
TA = .40
pH = 3.21
I guess I need to add acid blend and sugar. Georgia bound tomorrow, so I
can't pick these grapes until Monday. Is it even worth trying to make wine
with these numbers, or wait till next year?
