Do store it in the refrigerater. An unrefrigerated open container seems to
go rancid more quickly than something similar like peanut butter, at least
in my experience. It can harden up in the fridge, and require a bit of
stirring to mix it up when using, but at least it won't completely embitter
a batch of hummus because it's turned the corner into rancidness.
