I just use my microplane to do the zesting and let the zest sit out
overnight in a little flat dipping bowl. If you just left it out on
the counter, it would probably dry in an hour or less given the dry
heat where you live. No need for fancy machines to dry lemon zest
here either. Even in my fog & cool, it dries in no time flat. I
don't want it dried for most of my purposes, so I get it to the
freezer before it dries out on me.
