Why vermicielli rather than spaghetti?

I do that. In my case because I'm mildly wheat intolerant and I'd
rather not trigger the symptoms. Rice noodles come in many sizes. So
do quinoa, corn and buckwheat based noodles. Most buckwheat based
noodles are made with wheat so I have to read the labels on those
carefully.

There are pasta sizes nearly as small as rice grain.
