Pretty broad question. We eat fish often--all kinds of fish and
cooked in many different ways. Probably the most frequent is salmon,
cooked in a fiery-hot skillet with just enough oil to coat the bottom
of the pan. Four minutes on the first side, don't touch or move it,
turn over for 3 to 4 minutes. Salt 'n pepper. Lemon wedges. It
ranges from that simple all the way to coulibiac. -aem
