I have always used the coarse shredder. If I want something shredded
finer, I put the shreds into the bowl with the blade and pulse it a
couple of times. Works especially well for potato pancakes. I keep the
coarse shreds in ice water until I've finished all the shredding, then
squeeze them out and put them in the bowl with the blade. Pulse, pulse
and it's perfect.
