Mine never come out right. I think maybe because I put too much cheese in
them.

I am not picky about the cheese. I like any kind or a mix of cheese. I
also like strips of bell pepper, onion and a slice of tomato in there.
Rather than grill them, I toast the bread, butter each side then make the
sandwich, wrap in foil and bake it in the oven until the cheese melts. I
also vary the bread. Could be sourdough, rye or even white.
